The answer to that question with Limousin is yes ! Research conducted by Iowa State University comparing Limousin beef to Choice beef in five categories showed that Limousin beef ranked above the competition in tenderness and juiciness, and was equal in flavor and overall palatability.

In fact, Limousin is genetically trimmed, producting more muscle with a smaller muscle fiber containing less fat. Limousin beef has the ability to convert grains and forages to lean, red meat - not fat - was documented in research conducted at Texas Tech, Texas A&M and Iowa State Universities. Limousin beef, the study found, had an average of 2 1/2% fat (in the ribeye) compared to an average of 5% fat for Choice beef, and 9.5% fat for similar Prime cuts. Research also found Limousin beef in general had considerably less fat...2.43% versus 6.37% ...than the average Choice beef found in most supermarkets. These figures represent and impressive "61% reduction in fat", which lowers the calorie content in a three-ounce cooked serving of steak from 195 to 162.
